Asian Lettuce Wraps


1 (20 oz) pkg ground turkey
1/2 c hoisin sauce
1/2 c Asian peanut sauce
1/2 cucumber, chopped
1 to 2 carrots, peeled and julienned
Fresh cilantro
1 head boston lettuce leaves, cleaned and dried
1 bunch sliced green onions (opt)

Cook turkey; pour off any liquid. Add hoisin and peanut sauces; heat through. Serve with the rest of the ingredients and build your own lettuce wraps. This is great with rice- my kids love this meal.

Note: The hoisin and peanut sauces aren't cheap- next time I will try to make my own

  1. Yummy!! We had these last night, and the kids went on and on about how much they liked them and both asked for more, a couple times. As I'm typing, the hubs just called from work where he's eating this for lunch and called to ask what's in the meat b/c he loves it! I think my family is starting to look forward to Cathy's cooking more than mine!

    Also, as I was heating this up, I was worried about the serving size b/c it did not look like enough to feed our family of four. But we had it with rice, carrots, cucumbers and cilantro like suggested and it goes WAY farther than it looks. Fed me and the two older kids last night, hubby for a big lunch today, and I have plenty of leftovers for our lunch again today.

  2. We had this tonight and it was delicious! I have never had lettuce wraps and was kind of sceptical, but this was amazing.
